I HAPPEN TO HAVE LOTS OF TOMATOES IN THE GARDEN AT THE MOMENT SO THIS WAS AN EASY CHOICE FOR LUNCH TODAY. IT WOULD ALSO MAKE A GREAT DIP, OR SHARING PLATE WITH WARM PITTA BREAD. FROM PICKING TO EATING IT TOOK ABOUT 5 MINS, AND THERE REALLY IS NOTHING BETTER THAN FRESHLY PICKED SWEET RIPE TOMATOES . I DID GOBBLE A FEW BEFORE I MADE THIS!
LARGE HANDFUL (PROBS ABOUT A PUNNET) OF RIPE CHERRY TOMATOES, OLIVE OIL, DARK BALSAMIC - 100G FETA CHEESE, 100G RICOTTA, JUICE OF 1 LIME - I ALSO ADDED A DASH OF MILK TO LOSEN IT SLIGHTLY
HEAT A DRIZZLE OF OLIVE OIL IN A FRYING PAN, ADD THE CHERRY TOMATOES AND COOK FOR A FEW MINS UNTIL THEY SOFTEN, AND THE SKINS BEGIN TO BLISTER AND CHAR. WHILE STILL ON THE HEAT ADD A GLUG OF DARK BALSAMIC, AND CONTINUE TO COOK FOR ANOTHER MINUTE, THEN REMOVE FROM THE HEAT.
IN THE MEANTIME COMBINE THE FETA, RICOTTA, LIME JUICE AND GROUND BLACK PEPPER IN THE WHIZZER - I ALSO ADDED A DASH OF MILK TO MAKE IT SLIGHTLY LESS THICK.
SPREAD THE WHIPPED FETA MIXTURE ONTO A PLATE AND TOP WITH THE COOKED TOMATOES MAKING SURE TO SCRAPE ALL THE DELICIOUS BALSAMIC JUICES FROM THE PAN AS WELL - SERVE WITH WARM BREAD SO YOU CAN MOP UP EVERY LITTLE BIT OF THIS DELICIOUS SALTY SWEET COMBINATION!
