Earlier this week I had a phone call from a customer who wanted to place an order. We had a chat, and then at the end of the conversation she said to me “I so love getting your emails and hearing your news .. you clearly enjoy writing them”. It was such a kind thing to say and it made me realise that I haven't sent an email out for some time, but in reality I only chose to write when I feel something is worth sharing .. and sometimes the inspiration is lacking too, but then suddenly out of the blue something pops into my head and I’m off!
This morning was one of those times - I got a message from a gorgeous friend of mine saying she had just made some Gazpacho using the recipe from the Fino website - how sensible in this scorching weather! The recipe is one I have used for years (I used to make it all the time when we lived in Spain) so it is tried and tested, but I hadn’t made it for ages. Not only did her message inspire me to head off to the market and grab the necessary ingredients, but it gave me the nudge to write this email and share the recipe with all of you again - maybe some of you will soon have a big batch of Gazpacho chilling in your fridge as I have now - I had the first bowl for my lunch and it was yummy!
INSPIRATION FROM SPAIN ...
While the temperatures are soaring cooking can feel rather a drag but this Gazpacho recipe could not be simpler. The best thing is it requires no heating at all, and it honestly takes less than 10 minutes start to finish - all you need is the fresh ingredients and a blender. It is seasonal, it's full of goodness (you only have to look at the colours of the ingredients) and the dash of Fino White Balsamic gives it the most amazing sweetness - if you don't have any do grab some with 10% off (individual bottles) using code GAZPACHO until the end of the weekend.
